House of York’s Weeknight Meal Tips for Busy Families - chili con carne saidaonline

Imagine a perfect life where you arrive home to a delicious and wholesome meal waiting for you and your family to enjoy, after another busy day at work. And imagine it was even better than that and there was someone else waiting to clean up afterwards!

But as we all know, life isn’t always perfect, things seem to happen during the day and before we know it, we back to eating take away or ‘convenient meals’ as we like to call them. These days’ families are seen to be living in the fast lane, their daily lives include numerous activities, from work, extramural activities, household chores and the ability to be constantly ‘connected’ to technology, we’re often left with not much time for cooking and prepping a healthy meal for ourselves and our families.

However, there is a solution to break bad habits and to make sure you prepare healthy and nutritious meals for your family and that is to have a weekly meal plan.

A few weekly meal plan tips:

  • When planning your weekly meal plan, it is always a good idea to do this on a Sunday morning. You can sit down with your calendar, jot down all your weekly activities you have for the week ahead and decide which meal will work best for each day.
  • What also seems to work well is to make Sunday afternoon a fun, family cook-off day. Choose a meal to make that you could get at least three meals from in the week. Get everyone involved, you could write your grocery list and get your hubby to pop down to the store, to buy the necessary groceries needed for the week and then get your kids to help you in the kitchen, with chopping up or cleaning the dishes.
  • When deciding on what to make for your Sunday meal, we suggest prepping a dish that you could easily get another two meals from, or maybe even three, depending on your portion size. Our suggestion would be our delicious Chilli Con Carne recipe below, which makes at least 10 portions.

To get you started, House of York would like to share an old time favourite slow cooked Chilli Con Carne recipe, inspired by Jamie Oliver, but with a House of York special touch.

This recipe is full of flavour, does not require a lot of time or cleaning up, as it is a one pot meal. You can even prepare all your ingredients on a Sunday morning, put it on low and forget about it for the rest of the day.

Chilli Con Carne

Makes:10 Cooks:4-6 Hours Difficulty: Basic

  • 2 large red onions
  • 4 cloves of garlic
  • 1 big bunch of fresh coriander
  • 3 fresh red chillies (you can use your discretion depending on how hot you enjoy your meal)
  • olive oil
  • 1½ tablespoons sweet smoked paprika
  • 1 tablespoon cumin seeds
  • 1kg beef shin (ask your butcher for it uncut and on the bone)
  • 2 x 400 g tins of plum tomatoes
  • 2 x 400 g tins of butter beans
  • 1 cup frozen corn
  • soured cream

  1. Chop up the onions, garlic, coriander, and chillies.
  2. Place a saucepan over medium heat and add 1 tablespoon of oil, followed by the onions, garlic, fresh coriander and fresh chillies. Cook for 10 minutes, or until the onion is soft but not coloured.
  3. Once the onions are soft, add the paprika and cumin seeds. Fry for 5 minutes.
  4. Add the beef shin and cook for 5 minutes, or until all the liquid has evaporated and the meat has browned.
  5. Add the browned beef shin, onion and spices into your slow cooker, along with the tinned tomatoes and simmer for 4-6 hours on high.
  6. After 4-6 hours the meat of the beef shin should fall off the bone. Remove the bone and add the drained butter beans and frozen corn.
  7. Once done, serve the dish with sour cream and scatter over any remaining coriander.

The Chilli Con Carne recipe should make around 10 servings, which could last for three meals, depending on your family and size portions.

Another tip is to make leftovers your best friend, get creative and use leftover meals in a unique way. One way to use leftover Chilli Con Carne is to buy puff pastry to make small pies with the leftover Chilli Con Carne filling. We recommend used House of York’s6 Cup Muffin Panto make individual pies.

And it’s as easy as that with a little planning ahead of time, you can make your weeknight meals a walk in the park.
