How to Make Homemade Ice Cream -  october hoy

“I scream, you scream – we all scream for ice cream!”

You know that moment that you have a hankering for ice cream but you do not want to run to the store to buy?

Well, now you don’t have to because you can just make your ice cream at home with this great step-by-step guide to make your own homemade ice cream. With two methods at your disposal, you can choose between a quick fix and a longer, creamier process but bother are equally as tasty!

The kids will love it, your dinner guests will love it and you will not get enough of it.

Type Ingredient Ice Cream

This two-ingredient, no-churn ice cream recipe is definitely going to become one of your go-to favourites and you can thank for these amazing recipes and methods.


2 cups heavy cream, chilled

1 can sweetened condensed milk, chilled

½ teaspoon vanilla extract


In the bowl of an electric mixer, whip the cream until stiff peaks form. At low speed, mix in the condensed milk, vanilla and any flavourings.

Pour the mixture into a resealable container, cover the surface with plastic wrap and seal. Freeze for at least 6 hours or until firm. Keep stored in the freezer.

Freeze & Stir Method

While not as quick and simple as the two-ingredient method, the freeze and stir or plastic bag method has equal merit and allows for a creamier outcome if you have more time on your hands.


1¼ cups whole milk, chilled

¾ cup granulated sugar

2 cups heavy cream, chilled

1 tablespoon vanilla extract

¼ teaspoon salt


In a large bowl, use an electric mixer to beat the milk and sugar until the sugar is dissolved. Stir in the cream, vanilla and salt until combined. If the mixture isn’t cold, place it in the refrigerator until chilled – about 30 minutes.

Place the mixture in a deep stainless steel baking dish and freeze for 45 minutes. As it begins to freeze near the edges, remove it from the freezer and stir vigorously with a spatula. Return to the freezer.

Continue to check the mixture every 30 minutes, stirring vigorously as it’s freezing. If you have a handheld mixer or blender, use one of those. Repeat for 2-3 hours or until frozen completely.

Ice Cream Flavour Ideas

While plain vanilla ice cream is definitely a top choice for most people, you might want to give a few different ice cream flavours a try once you have gotten the knack for making homemade ice cream.

Here are a few ideas to get you going:

  • Mint Chip – add 1 teaspoon peppermint extract and 1 cup mini chocolate chips with a few drops of green food colouring.
  • Peanut Butter / Nutella – add ½ cup to 1 cup spread.
  • Chocolate – add ¾ cocoa powder (sifted) with 100g cooled chocolate.
  • Blueberry – add 2 cups of fresh blueberries with 3 tablespoons of sugar and 2 tablespoons of lemon juice cooked in a small saucepan over medium-high heat until burst. Allow chilling before swirling into the ice cream.

Pro Tip: the type of ingredients you combine with your ice cream to create different flavours might influence how long your ice cream will take to set in the freezer.
